Why Music Theory?

Pianists and guitarists have the opportunity to see first hand how melodies, harmonies & chords work.  But us single voice instrumentalists enter the musical world and learn to play our parts, hear the harmony and find our place.

Flats are lower, sharps are higher but naturals go in BOTH DIRECTIONS?  Why?  Can you read all the notes, know your keys (major and minor), do you understand all 3 minor scales?  Why do I have to know what an interval is?  How do you build a chord?
